Instant Bhatura - No curd or yeast


Bhature goes very well with Chole. But you need to do preparation before hand to make it. With curd or yeast, it needs preparation time. Here I am going to tell the recipe for instant Bhature. Just prepare the dough and make bhature immediately without any waiting time.

Ingredients

  • 3-4 cups of all purpose flour
  • 1/2 cup of semolina or Suji (optional)
  • oil 
  • Soda water or sparkling water

Instructions

  • Take all purpose flour in a big vessel. Add suji or semolina (optional) to make it little crispy. 

  • Use Soda water to make dough instead of water or curd. Add soda water little by little and start making a block of dough.
  • Now apply some oil and knead the dough again. Oil will make the dough soft. 
  • Now make big balls out of the dough. 
  • Apply some oil on the ball and roll that in rolling board to form Bhatura. You can either roll it to oval shape or in the circular shape as per your choice. 
  • Now heat oil in a pan to high flame and deep fry your Bhatura.
  • Serve it hot.

Pizza Paratha



Here is yet another recipe, an Indo-Italian, Pizza recipe in Indian style i.e. Pizza Paratha. You can add the toppings of your choice as you would prefer in your pizza. We will prepare the paratha stuffing with the Pizza ingredients, and you will experience the unique taste of paratha.

Ingredients
  • 1 finely chopped medium size onion
  • 1 finely chopped capsicum
  • 2-3 big tablespoons of corn
  • any topping of your choice
  • 2-3 tablespoons of Pizza sauce
  • cheese slice
  • shredded cheese (optional)
  • Herbs (Oregano, basil leaves powder etc. of your choice)
  • salt to taste, pinch of black pepper
  • Whole wheat flour dough
  • ghee

Procedure
  • Whole wheat flour dough recipe is not included here. The recipe is same as what you prepare for normal paratha. But just add some salt in dough while preparing it, if you already don't add it. 
  • Add chopped onion, capsicum, corn, herbs, salt and pepper in a mixing bowl. You can also add chopped green chilies here based on your taste. 

  • Now add pizza sauce and mix it well 

  • Prepare a flat roti from the dough as shown below. 

  • Place a cheese slice in the middle of the roti. 

  • Now add the mixture on top of the cheese. You can also add some shredded cheese here depending on how much cheese you or your kids like.

  • Now we have to make a triangle. First apply some water using finger tip on the border of the roti, so that it sticks properly when you fold it. Now, fold the base from 1 side as shown below. 

  • Now fold from another side. 

  • Finally fold from bottom. 

  • Heat pan in medium flame first. When it is hot enough, transfer the stuffed paratha on the pan and put the flame to low (since we have cheese in the filling, we would like it to melt properly). 

  • Once done from 1 side, flip it to the other side. 

  • Now apply ghee and flip it once again. Apply ghee on the other side as well and let it cook in low flame for some time till it is nicely done. Press it gently in between on pan so that it becomes little crispy. Pay special attention to the edges. Serve it hot.

Bedmi Puri


Puri is an integral part of our festival food. But we don't have to wait for any festival to have it. We can also have it in breakfast with any pickle and it is also very convenient to carry when going out for any trip. It is also mostly liked by the kids. Here I will tell you a variation of Puri with Dal (Indian pulse) filling, which will add some nutritional value to it. There are two ways of making it. One is by stuffing the paste inside the puri (when you roll it) and another is by mixing the paste directly in the dough while preparing it. I will tell here the second option i.e. adding the paste in dough which is also the simpler option. 

Ingredients
  • 1 cup of Moong chilka daal or Udad daal
  • Some ginger
  • 1-2 green chili
  • 3-4 cups of Wheat flour
  • oil
  • Spices (red chili powder, coriander powder, cumin powder, Hing, salt)

Procedure
  • Soak Udad daal in water for around 1-2 hours (Moong chilka daal can also be used)

  • Grid daal with little water, green chili and ginger to form a paste
  • Now add this daal in wheat flour and add spices (red chili powder, coriander powder, hing, cumin powder and salt) and mix it well. Add water little by little to make it a dough. Also add some oil in dough to make it little hard but smooth puri like dough.

  • Now divide the dough in small portions and make balls out of it. Take 1 ball at a time and roll it to form puri like shown in picture below
  • Parallelly heat oil in a pan and deep fry the puri when oil is hot. Enjoy it with any pickle or Aloo Tomato sabji.

Muglai Paratha or Egg Paratha


If you have no clue what to cook, than this is the best option. We normally have eggs at home and this will be ready in no time.

Ingredients

  • 2 Eggs
  • 1 small onion finely chopped
  • 1 green chili
  • Spices (Salt, red chili powder, coriander powder, cumin seeds, coriander leaves)
  • oil or ghee
  • Dough from wheat flour (recipe not included here)

Procedure
  • Break eggs in a bowl. Add chopped onion, green chili and spices. Mix it well.

  • Take a small portion from wheat flour dough and make a ball. Cover this ball with the flour and then roll it on a rolling pan to make a flat bread. Apply ghee all over it and fold it to half. Apply ghee again on the top surface and fold again like a triangle (see pic below).

  • Cover it again with the flour and roll it again to form paratha.

  • Heat pan on a medium flame and transfer this paratha on the pan. Flip it to the other side, when u see little bubble on the surface. Apply ghee on both sides and flip again till u see that the paratha is almost cooked.
  • Keep the gas in low flame. Now using spoon try to open the folds as shown in figure below and fill it with egg paste (what you prepared in step 1)

  • Let the paratha cook till you see the egg inside it is also cooked. Flip it to another side, so that it is cooked from both the sides.

  • Enjoy the paratha with Tomato Ketchup.
